 For the days where oatmeal doesn’t cut it…make oatmeal pancakes. Seriously amazing.

spray some coconut oil spray on the pan and throw in the mixture.Image

Everyone needs to eat this at least once in their lifetime. Think something between banana nut muffins, banana pancakes and a healthy bowl of oatmeal. BAM. In literally four minutes and less than 200 calories. Bon Appetite.

Ingredients:

1/3 cup oatmeal

1 egg white

2 tsp almond milk

1 tsp PB2

1/2 tsp baking powder

1 medium banana (1/2 mashed in pancake, 1/2 for garnish)

pinch of cinnamon

chia seeds to sprinkle

honey to drizzle

Do it: mix the oats, egg white, mashed banana, baking powder, almond milk, cinnamon and PB2 in a bowl and pour mixture on the pan sprayed with coconut oil spray. Even it out nicely depending on the size and thickness of your liking, let it brown a bit on medium heat (about 2 min) and flip. Drizzle with honey (or spread on some peanut butter, maple syrup…whatever floats your boat) and some chia seeds and sliced fruit and devour.
