So, I am an oatmeal fanatic (in case that hasn’t been apparent since day 1) and I’m pretty into healthy baking. So this concoction really tasted like freshly baked banana bread, except…it was just an oatmeal makeover. A couple of chocolate chips couldn’t do any harm. Next time.
Mix the following ingredients in a bowl, and then pour into an oven-safe baking pot to bake:
-1/3 cup oat bran or rolled oats (I used Bob’s Red Mill oat bran, which BTW has 7g of protein!)
-1 packet truvia
-1/3 cup almond milk
-1/4 tsp baking powder
1 medium mashed banana (mine was frozen, I let it sit out for a bit to defrost and it had a really nice/smushy consistency, not sure if that made a difference…)
-1 egg white
1/4 tsp vanilla extract
-pinch of cinnamon
-toasted pecans or walnuts for garnish
Directions: once all these ingredients are mixed up, place them in your baking dish. Grease the baking dish first with spray (I used coconut oil spray) and bake at 250 degrees for about 30 minutes.
