avocado cucumber basil gazpacho

I guess 90 degrees and humid as death = summer time in Miami, so here goes the perfect recipe for survival.

Okay, here’s the lowdown…I don’t do long ingredient lists and complicated recipes, so this one was simple as can be and came out pretty impressive and tasty.

  • 1 ripe avocado
  • 1 large cucumber (remove seeds, leave skin on)
  • 2 scallions (the whole thing)
  • 1.5 limes
  • 2 cups of water
  • 1/2 clove garlic (maybe do a bit less if you’re not dining solo…if you know what I mean. It was pretty garlic-y)
  • A handful of fresh basil
  • salt

-Make sure all ingredients are chilled and blend! Then just refrigerate and devour.
