I’ve taken better squash images since my inception, I really have. But the lighting was meh, and the photo wouldn’t do it justice anyway, so you’re going to have to take my word and head to Santina immediately and eat this squash carpaccio.
Just go. This is 100% on my top 5 things I’ve eaten in my recent life span of almost 25 years. I also really love Santina. It was my third visit, and first dinner visit, and the arugula salad with figs and goat cheese is also killer. The music was really off (think mariachi meets Pavarotti), but with my mom’s company and an excessive amount of dishes, I was able to almost tune it out.
Ugh the mixture of flavors was a work of art. Toasted pumpkin seeds, some honey situation and potentially mascarpone dollops. GO.
